Ingredients:

1-1/2 cups of frozen pearl onions
1 3 lb boneless beef chuck roast
1 cup beef broth
1/4 cup all purpose flour
2 tbsp parsley
1 package French onion soup mix
Directions:
  1. Preheat oven to 350°F. Place pearl onions in a 5 quart oval roasting pan.

  2. Place beef on top of onions. Combine beef broth, flour, parsley and soup mix in a large measuring cup or small bowl; mix well. Pour over beef in pan.

  3. Cover pan and bake until beef is fork tender, 2-1/2 to 3 hrs.

  4. Remove beef from pan. Slice crosswise into 8 portions. Place on serving plates. Spoon pan juices and onions over each serving.

  5. Server with potatoes and green beans.
