Beef Rib Roast
Description:
This prime rib roast with garlic rub truly makes a great meal. Impress your better half with this wonderful offering. Serve with potatoes and steamed vegetables.

Ingredients:

3 large Garlic Cloves, minced

1 1/2 tbsp salt

1/2 tsp paprika

1/2 tsp turmeric

1/2 tsp ground thyme

1/2 tsp pepper

7 lb beef rib roast cut from the small end (3 rib section)

2 tbsp vegetable oil
Directions:
  1. Mix in garlic, salt, paprika, turmeric, thyme and pepper in small bowl.

  2. Wipe beef dry with paper towels. Rub all sides with oil.

  3. Rub garlic and salt mixture over sides and top of beef. Transfer to a shallow pan.

  4. Cover loosely with foil. Refrigerated over night.

  5. Let roast stand at room temperature 1 hour.

  6. Position rack in lower third of oven and preheat to 450 degrees.

  7. Roast for 30 minutes to seat.

  8. Reduce oven temperature to 325 degrees. Roast until thermometer inserted straight down from top center reads 120 degrees for medium rare, about 1 hour and 15 minutes longer.

  9. Transfer meat to platter. Let meat stand at least 15 minutes.

  10. Carve meat into 3/8 inch slices and serve.
